Brunkow Cheese of Wisconsin
Brunkow, one of Wisconsin's oldest operating cheese plants, has been making cheeses since 1899. The fourth generation makes a variety of cheese from the milk of 30 southwestern Wisconsin dairy farmers. With a long history in traditional Wisconsin varieties, Brunkow recently turned its talents to small-batch, handcrafted artisan originals. Little Darling carries an earthy and complex flavor, created by the wild molds formed during cellar aging. Pendarvis starts with raw cow's milk and finishes with cellar aging, resulting in a thin rind, delicate citrus flavor and firm body. Argylshire is cloth-wrapped and cellar-aged to achieve an earthy flavor and firm texture.

Butler Farms is one of the first licensed Grade A sheep dairies in the United States. The dairy's Camembert is made from sheep's milk and cow's cream with a light mold rind and rich, creamy texture. Widmer’s Cheese Cellars
The Widmer family has operated the Cellars since 1922 and is currently operated by the third generation of Widmers. The company carefully produces some of the finest Brick, Cheddar and authentic Colby cheeses in the world. Cheeses are all handcrafted in small batches to ensure quality. Curd is moved by hand from the vat to cheese molds and each is hand-turned three times on the first day.
